Jalapeño Bacon Bombs : So Keto…

Mickey Finn's Jalapeño Bacon Bombs

While visiting one of my favorite local brewery and pub, Mickey Finn’s, I was excited by a new item on the new additions on the menu: Jalapeno Bacon Bombs.  Described as gutted jalapeno peppers, filled with cream cheese and wrapped with bacon,  I knew it was just what I had to try as a Low-Carb/Keto food, and this is what arrived to the left here.

The peppers were soft on the outside but with a very satisfying crunch, and just the right amount of heat.  The mixture of smokey bacon, and seasoned cream cheese filling rounded out the flavor, and matched the texture.  I knew I had to make an attempt at making these at home, and here was my first try.

Quick Fix: Low-Carb Stuffed Poblano Peppers

Poblanochilli

This week my wife texted me that we had received some little poblano peppers from our CSA haul, knowing I love spicy peppers.    Poblanos are a mild pepper most popular for being served stuffed  with meats, cheese, and rice at many restaurants.  So coming home late from work, I thought I could make a “quick fix” meal using the lovely peppers, in a low carb way.

Low-Carb Mayo Quest: Olive Oil

In one of my previous posts,  I mentioned I was looking for a better low-carb mayonnaise.   In today’s post,  I’m going to talk about my attempt to do just that, in what I am calling “Mayo Quest”.

Wait,  isn’t Mayonaise already Low-Carb?   Actually, for the most part it is indeed!   Mayonaise is a rather ingenious invention that has a few simple ingredients, and when mixed in the proper order to form an emulsion yields a very tasty concoction!  Unfortunately (or fortunately for some) most store bought mayonaise products have a dirty little secret that few may be aware of.

Low down on Low-Carb

low-carb-foods

I stated in my earlier post on the state of being fat, and what my goals were in making lifestyle changes in order to achieve them.   While I may not have said it directly,  my chosen path to this achievement is adopting a low-carb lifestyle when it comes to nutrition choices.   There are a ton of a pros and cons strewn across the web on why low-carb is good, or reasons why it’s perceived to be harmful, so I had to do some research before I made up my mind that this would be a direction which would work for me.   Before I go into what the future holds, let’s look at what has happened in the past to bring me to here.

Here We Go.

So this is a new site I’m putting together to share my experiences with starting a new “Lifestyle” My intent is to post information I’ve learned along the way,  as well as my progress (or lack of) as this unfolds.  ”Diet” Blogs,  Nutritional posts,  are all over the internet,  and I expect this one to get lost amongst the noise.   So then, why do this?  I look at it as making such a change in “public” keeps me accountable,  and fuels my own personal interest in learning how to have a healthier life, and lifestyle.  If information,  or conversation here helps me, and ultimately can be a source to help others, than that is what my goal is for this site.
